These little tacos make a great appetizer! Endives instead of tortillas keep a nice crunch and have great flavor.

Ingredients
-1T coconut oil
-1lb ground lean chicken
-2 green scallions (chopped)
-1 clove garlic ( chopped or pressed)
-Endives (washed and trimmed)
-Trader Joe's Garlic Sauce
-1 small avocado
-lemon or lime juice for flavor
-salt and pepper to taste
First, heat up your coconut oil in the skillet and add your ground chicken. Make sure your skillet is hot enough that the chicken cooks in the oil instead of just soaking it up.
Add your chopped onions, garlic and salt and pepper.
While your chicken is cooking, prep your Endives
Trim the ends and rinse them off, and spread the garlic sauce on in a thin layer (like mayo on a sandwich)
Then prep your avocado. I like to take the seed out, and score it in the skin with a knife. Then scoop out the chunks with a spoon into your prep bowl. Add your lemon or lime, salt and pepper and just mix it up.
Lastly! Load your ground chicken into your prepped endive cups and top with your freshly made guac!
