Spiced Chicken with Veggies!

Not only did I love this dinner.....
But so did My Husband and Daughter! (she's 2, eating can be a task)
K, so here's the gist
Spiced Chicken Breasts
Zucchini and Green Beans
Baked Sweet Potato Fries
Heres the prep
Wash and cut your veggies
1 sweet potato
2 handfuls of green beans
While your oven is preheating to 450, coat your potatoes with EVOO, salt and pepper. Once pre heated, put your sweet potatoes in the oven to brown for about 20-25 min. Check them half way through to flip.
Spice your chicken breasts
2 organic hormone free chicken breasts
1/4 tsp kosher salt
1/4 tsp crushed pepper
1 crushed garlic clove
1/4 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp onion powder
Then heat your skillet and coat it with your choice of oil. Let chicken breasts brown on each side(make sure it's hot enough), then turn down heat and cover to cook through.
Cook your rice. Just as your rice is almost done add the green beans to the top and cover for them to steam.
Add your Zucchini to the chicken skillet
Remove your Sweet potatoes from the oven and set on a rack
Once your veggies are cooked through, remove it all from the heat and serve!
So, I was clearly documenting this meal for the purpose of blogging this recipe, and we were so hungry I forgot to take an after pic right away. So, you are getting a picture of my husband's partially eaten plate. This is real life guys :)
Our daughter loves chicken and rice, so this one was a hit. She actually really dug the sweet potatoes too!
